BUTTER SUGAR COOKIES

2 cups butter, softened

1 cup sugar

1 egg

1 1/2 teaspoons vanilla

4 1/2 cups all-purpose flour, sifted

Cream butter and sugar. Add egg and vanilla. Gradually add flour. Mix well. Roll dough into ball, wrap in wax paper, and refrigerate for 1 hour. Roll out dough 1/4 inch thick on a floured surface. Cut into state shape with Mississippi Cookie cutter. Bake at 375 degrees for 6 to 9 minutes. Do not brown. Decorate cookies with frosting or Royal Icing.

FROSTING:

1 cup confectioner’s sugar

6 to 7 teaspoons water

Food coloring (optional)

Mix together, and brush on cookies. Thin with water.

ROYAL ICING:

3 large egg whites

1/2 teaspoon cream of tartar

1 (16-ounce) box confectioner’s sugar

Food coloring (optional)

Beat egg whites and cream of tartar until stiff. Gradually add confectioner’s sugar. Thin with water for icing.
