PATTY’S PICK: Salisbury Steak and Potatoes

This is one of my husband’s favorite meals. It is a wonderful fall meal with a green salad or green vegetable and so easy. Enjoy!

Salisbury Steak

MEAT PATTIES:

1 pound lean ground beef
¼ cup Panko breadcrumbs
2 tablespoons ketchup
½ teaspoon ground mustard
1 tablespoon Worcestershire sauce
½ teaspoon onion powder
Salt and black pepper to taste
1 tablespoon olive oil
½ sweet onion, sliced
1 (4-ounce) jar sliced mushrooms, drained  

GRAVY:

2 (.87-ounce) packets brown gravy mix
2 cups cold water
1 teaspoon ketchup
½ teaspoon Worcestershire sauce

For steaks, in a bowl, mix together ground beef, breadcrumbs, 2 tablespoons ketchup, ground mustard, 1 tablespoon Worcestershire sauce, onion powder, salt, and pepper. Form into 5 small patties. In a skillet over medium heat, heat olive oil. Add patties, and brown for 3 to 4 minutes on each side until browned. Remove from skillet to plate. Add onions, and sauté until browned. Remove to plate. Add mushrooms, and sauté until browned. Remove to plate. For gravy, in a skillet, stir in gravy mixes, and whisk in cold water, 1 teaspoon ketchup, and ½ teaspoon Worcestershire. Whisk until smooth, about 2 minutes. Return patties, onions, and mushrooms to skillet with gravy, reduce heat to low, and simmer for 5 to 10 minutes. Serve with Creamy Mashed Potatoes.

Yield: 5 servings

 

Creamy Mashed Potatoes

5 pounds red potatoes, peeled and cut into small pieces 
1 stick butter
½ (8-ounce) package cream cheese, softened
½ cup half-and-half, room temperature
Salt and black pepper to taste

Bring a large pot of water to a boil. Add potatoes, bring back to a boil, and cook for 15 to 20 minutes until fork-tender. Drain potatoes, and return to dry pot. With masher, mash potatoes. Add butter, cream cheese, and half-and-half. Mash until combined. Season with salt and pepper.

Yield: 10-12 servings
